INGREDIENTS
SERVINGS: 1 LOAF– 4 and 1/4 cups (535 grams) all-purpose flour spooned & leveled– 1/4 cup (50 grams) granulated sugar– 1 teaspoon baking soda– 1 teaspoon salt– 1/4 cup (60 grams) cold unsalted butter cubed into smaller piece– 1 cup (160 grams) raisins or dried currant– 1 and 1/2 cups (360 ml) buttermilk– 1 large egg
INSTRUCTIONS
Warm the oven up to 190°C (375°F). Put a silicone baking mat or parchment paper on a large baking sheet and set it aside.

Mix flour, sugar, baking soda, and salt in a large bowl. Cut cold cubed butter into dry ingredients with a pastry cutter or fork until pea-sized crumbs form. Add raisins and set aside.

Mix buttermilk and egg in a separate bowl until combined. Pour the mixture into the dry ingredients and gently mix until just combined. It's okay if the dough is sticky.

Turn the dough out on a floured surface, flour the top and your hands, and knead it a few times, adding flour as needed, until it forms a 7-inch ball.

Cut a 'X' in the bread's top and brush with buttermilk if desired. Bake at 375°F (190°C) for 45-60 minutes until browned on top and a toothpick inserted into the center comes out clean. Slice the bread after 15-20 minutes of cooling.
