SERVINGS: 12 FUNNEL CAKES– Canola or vegetable oil for frying– 2 cups (250 grams) all-purpose flour spooned & leveled– 1 and 1/2 teaspoons baking powder– 1 teaspoon ground cinnamon– 1/4 teaspoon ground nutmeg– 1/4 teaspoon salt– 1 and 1/2 cups (360 ml) milk– 1/4 cup (50 grams) granulated sugar– 2 large egg– 1 teaspoon pure vanilla extract
INSTRUCTIONS
Fill a large skillet or pot halfway with oil over medium heat. Let oil heat to 350°F (177°C) while you make funnel cake batter. Mix flour, baking powder, cinnamon, nutmeg, and salt in a medium bowl. Set aside.

Whisk milk, granulated sugar, eggs, and vanilla extract in a large bowl until combined. Mix dry ingredients with wet ingredients until just combined.
